- 2 lbs Mussels
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- ¼ cup onion, diced
- ¼ cup red wine vinegar
- 1/3 cup olive oil
- 1 Tbsp parsley, chopped
- salt and pepper to taste
Directions
Combine all ingredients except the mussels. Mix well.
Add the mussels to a large pot of boiling water. Cook about 4 minutes. Drain mussles and place in bowl. Pour vinaigrette over mussels.
